If any service stops, there is a reason. Simple as that. You might want to check /var/log/mysqld.log

Vesta uses iptables as a firewall and fail2ban is used to scan log files, IP's that cause too many password failures or seek for exploits are added to iptables. If iptables is stopped, you have no firewall.

You should first allow the port (and maybe also your home/office IP) in Vesta, otherwise you'd lock yourself out. You can do that in Vesta's web interface. Then you can edit /etc/ssh/sshd_config to change the port. Don't forget to restart ssh (service sshd restart) to apply your changes.

What do you mean with setup a fallback mailserver? There is no mail cluster yet? Using a fallback mailserver has nothing to do with clustering. I'd say it's perfectly safe. If you're worried though you should make sure you have backups and run the update on a test-server first before doing it in a production environment. Easy as that.
