Switch to postfix on debian/ubuntu?

I was curious if it was possible to use postfix on debian/ubuntu as opposed to exim? Exim's configuration is rather verbose and unfamiliar to me, as far as I am aware, postfix is uninstalled on debian/ubuntu, but works fine on redhat/centos? Could such be elaborated upon with regard to this decision...

Do the install as per normal, and change the configuration not to use the same ports, then you can use nginx to do a reverse proxy to the port you want, I imagine.

Have you checked your crontabs to see what scripts are running?

Also, when you create a user, there's an ability to give them shell access or not, perhaps someone is attempting to brute force your site?

Have you patched shellshock?

I would say so, and if you need to change the template to caching for when your server starts getting hit hard, just go ahead and change it in the web domain configuration page.
