Use the Test Email Server from the orange drop down, also anything in /var/log/exim/rejectlog

Making progress now, I re-added the extra lines from your second post (I put them in the wrong place I think) to dovecot.conf & exim.conf files and some entries are getting banned but not all. This is information intended to be known, removing it will most likely cause all emails to be sent to the recipients spam folder or just outright rejected by the receiving mail server.
