Never had that problem in the past two years. Are you sure the A / Cname of the subdomain is pointing towards your vestacp server? (and yes I know I'm responding to a very old topic; however this came up high in google and felt obliged to answer ;-) )

NOT possible! You cannot use wildcards when applying for a domain at LetsEncrypt. However .. what does work is setting up a Flex SSL wildcard for A or CNAME records and then have https://www.cloudflare.com manage your DNS. But the whole purpose of Full SSL is security. Wildcards ain't about security.
