Well, it's possible, but not in easy way.
Much simpler - reinstall.

Is there any real case scenario recorded for such matter? if yes, where to find it? (I'm on Centos 7)

Why do you want Apache + Nginx?

I have done this before but you will have downtime because there's no simple and easy solution. If you have custom nginx rewrites set-up you must set these up in Apache and change all the configuration files and Vesta config before you rebuild each user.

It is a lot easier to backup users, send them to a backup server, reinstall Vesta, transfer from backup server to live server and restore every user starting with admin.
