Pointing a sub-domain to the same server always loads the root domain
I've set domain.com to point to the IP of the VPS. (in cloudflare with A record to the IP) and that is fine
However, i've set subdomain.domain.com to point to the same IP and then created new site in vesta, subdomain.domain.com
However, subdomain.domain.com doesn't load the new site but domain.com
Is that the expected behaviour?
How to make it resolve to the new site under subdomain.domain.com?

Have you forced https on the website?

Try activating Let's encrypt on the domain. And also create two A records - one with sub.domain.tld with the IP of the server and another www.sub.domain.tld also with the IP of the server
