running:
Centos 7 with the latest Vestacp/nginx + php-fpm/php71
Im running the latest version of curl available from centos 7 base: curl 7.29.0
I have software whmcs panel thats recommending to update to 7.35.0+
I cant locate a safe repo to install it from so im considering compiling it from source to latest version 7.61.0
Will this break anything in the vestacp environment?

You can update the php environment, it should not break vesta.
