I think that partitioning is not important to VestaCP at all.
VestaCP is just a 'worker' at your server... not requiring any special partition...
You can put everything on /, you can also put /home on separated partition, but again... it's not related to VestaCP at all...

I just build a new dedicated server with VestaCP and I have choose this partitionning :
/ = 10Go
/backup = 20Go
/home = 40Go

Values are not important.
I prefer separate /home and /backup to avoid full disk space on /
I hesitate to partitionning /var for the same reason, but I finally didn't

When you have mirror raid and remote backup too, it's not really important.
Make sure you have enough space for /home /backup /usr /var - that's all.

Many servers I saw all space bring to / and now it's not such mistake.
Time when hdd was small and cost a lot in the past.
