v-add-letsencrypt-domain <user> <maindomain> <alias1>,<alias2>,.....<alias20> return that error.
Let's Encrypt finalize bad status 500
Vesta latest version, Ubuntu 18.04.1 LTS (GNU/Linux 4.15.0-70-generic x86_64)

Yep, the same on all my servers, looks like LetsEncrypt changed API again?

It was a probleme at Letsencrypt try it again now it should work

Yep, looks like it was a temporary issue on LetsEncrypt side.
LetsEncrypt is working again on all servers.
