The solution was to simply delete the conf and set it new from vesta template. restart with service exim4 restart and I had to accept SSL cert in thunderbird again and it sends and receives again.

congrats. just finished another answer with a lot of text, but that seemed to be not needed anymore ;-)
regarding the question of backing up and restoring: this most probably would have worked as expected.
if you look into one of those generated archives you'll see that there is not much besides the original mails itself, which is to be backuped. only the domain-wise settings as you see them inside the controlpanel including the DKIM signature.
so nothing which could transport bugs to the new system.
and yes, if I remember correctly this will completely overwrite the specific user if it exists.

When I started with changing the hostname it was also that I only observed the problems a little later, due to this, it might well be, that it was not connected at all.
Because DKIM, I wanted to create a perfect email acceptance, thats why I started to change hostname. I checked on a diagnostic tool and not all settings are hundred percent, you know?
Because when I use only ONE hostname like mail.domain.com and I have many other domains running on the panel also they will always use this mail.domain.com and its viisble in their headers. Because the main site and the hostname are about porn, I wanted to avoid it.
Why does vesta use this setting as described in the documentation, so simple and short?
I would want that each domain has its own outgoing server or I can use a hostname, that is not related to the domain (mail.pornomaterial.com) ...

this is just because your server only got one (host)name and thats the one your mailserver is telling. the IP you are sending from also can only have one reverse dns name and not multiple different.
as this is another layer than the domains and mail-addresses itself, its perfectly fine if all is setup correctly this way. thats how shared hosting works (mostly).
if someone might find the meaning of your domain in the mailheader or logfiles disturbing you could simply consider using another more meaningless domain just as hostname and therefore servername, a simple subdomain of some other domain will suffice.
otherwise you probably would need an extra IP for each domain and mailserver you'd want to separate from the others...
