Vesta Webserver and separate Mailserver

I just setup a new VPS Vesta with roundcube and exim, dovecot for mail only. I still want to use my VPS1 as a webserver and have the sites running but i want the mail on VPS2.
Im a little bit confused about the DNS, should i use a cluster here? and what should i change in the MX fields?
and how about the redirects from the Webbserver VPS1? can i make every domain.example/webmail redirect to roundcube on mail.vps2.example?
