Can't Create E-Mail Accounts

Everything was fine until mid-December when the one email account I had set up stopped receiving email.

In an effort to fix that I've tried recreating the email as well as adding a new email account.

The result is that most of the time no folder is made in the mail directory -- although on 6-8 test email accounts attempted 2 did create properly and the email worked fine. In the VestaCP panel, the email shows up as existing despite the lack of an email in the mail folder for that domain.

I've tried this with multiple domains and the same behavior.

I hate intermittent issues because they are basically impossible to solve.

Does anyone have any idea what could cause this? Which log files should I be looking at for clues?
