Finally got this to work. Just to add some info:
After creating the Roundcube database, there's no tables in it so you need to add all the tables. To do this (someone has mentioned this in the 1st page but link is broken or by someone in forum), you need to download roundcubemail from sourceforge, open the /SQL/mysql.initial.sql file for SQL functions, copy & paste it in phpmyadmin to create the tables. After doing this, the error should be gone and you can login to RoundCube.
However, sending and receiving may not work. So you need to (also mentioned in forum) copy files from Roundcube sourceforge download folder /program/js/tinymce/ to replace files in your server /usr/share/roundcube/program/js/tinymce/ .
The only error I see in /var/log/roundcube/errors is:

Been following this thread trying to get my issue sorted out as well. I finally figured this out after being frustrated over the broken link above, but after doing this I still have the same error. I think it has to do with godneyjeansus's step 5. However, I'm on CentOS 6.6 and can't find any of these files. Edit: Looks like the file I'm looking for is /etc/roundcubemail/defaults.inc.php, but it's still not working for me. Going to keep configuring this until I get it right I guess.
Edit 2: Make sure your roundcube mysql user is set up correctly, that was my issue. Works now!
