I see database "admin_default" is empty. Since I do not know password for admin_default, is it safe to delete user "admin_default" and its database?

yes... safe to delete

If it's truely empty then yes. I don't use mysql (postgresql is what I'm running) and find that roundcube complains after I delete the database and disabled mysql.

don't confuse the OP. He is asking if Deleting the Default admin_db is safe or not; which is safe.

Disabling MySQL service can have serious problems, and is not recommended, but that is not the subject of the topic
