I installed Debian 7.8 and Ubuntu 14.04.

The package versions in Debian is always older.
So Debian is more stable?
Debian = php 5.4.41
Ubuntu = php 5.5.9

joem,

Why CentOS?

Older, but stable. You sure, you need only newer version php? I doubt that.

CentOS - more stable with VestaCP, panel was made for this OS and then ported for Debian, and then for Ubuntu.

DotDeb has always a newer PHP version as the default mirrors from Debian.
