In my case, there were issues during the auto-renewal of the certificates. More specifically, the auto-renewal procedure of Let's Encrypt erases the old certificate before creating the new one. This will remove the symlink.

long answer: You have to repeat the procedure manually after every let's encrypt renew (~2 months). That's why I use this small script: viewtopic.php?f=19&t=13057
