I am trying to change the roundcube mail URL.
I read the topics on this forum about how to change the URL from https://IP:8083/rouncube to subdomain.url.com
I not sure how to proceed with this change.

My question is about how to made this change for multiple accounts. I meant www.website1.com with mail.website1.com or www.website2.com using mail.website2.com ...(etc)To do this via GUI go to:
SERVER > Configure > Mail > Webmail URL
To do via console:
Edit the etc/apache2 (or httpd)/conf.d/roundcube.conf file.
I not sure how to proceed with this change.

I think this is not so easy. We would need to add the alias (for example webmail) to every created domain -> webmail.domain.tld. But also for Let's Encrypt Support, the alias for webmail.yourdomain.tld should be included to the cert and the dns record for webmail needs to be created. So this will not work within a small change and have to be done as a new feature from vestacp side.
Better is to use yourdomain.tld/webmail, that works on every you've setup on the server and is also compatible with let's encrypt.

Of course, I think that this mode of work should be included in future revisions. Is more logical approach for customers.

Not unless you have separate roundcube install per domain, but that would be a lot more headache to configure.
