I asume you wait razonable time to NS will propagate over internet ?
If you change A entry in your dns and do a ping it will respond to old IP, you may have it cached,
Try external service as ping.eu to check it.

Not, vesta not support it by default, you can create a custom template in vesta to do it
But I not see any good reason to do a proxy pass if you not want a load balacing

So, in this case, why you use vesta en both servers ?
You have server 1 just for proxy and server2 with your data ?
You can use haproxy or something like that for do a proxy_pass
In any case, you can create your templates just by edit or copy it in /usr/local/vesta/data/templates/web/nginx/
You can take any template like hosting.stpl and hosting.tpl and then copy it and host as your_custom.stpl and your_custom.tpl edit it just modify you want ( proxy pass directive ) and then in vesta panel you can select it for your sites
But if you want just a proxy pass run, nginx only, varnish o haproxy for it, or nginx + varnish you can do a proxy_pass with well caching options and reduce your delay conection
