Login in control panel -> Add User -> then login as user -> Add Web Domain

Let me give you an example
1. Login to VestaCP
2. Click Web
3. Click Add Web Domain
4. Input Your Subdomain Name

I just added a new 'A' record to my domain dns configuration in my registrar configuration panel pointing to the IP adress of the server where vestaCP is working. Then I went to vestaCP and just added a new web with the subdomain.domain.* form.
In the link below there is a tutorial where you will see a basic explanation and some screenshots showing how to set a subdomain using vestaCP and freenom as DNS registrar. It is in spanish (sorry) but may be useful for you or someone else. Good luck.

For me works that:
- into main domain at DNS submenu add CNAME record with subdomain name (when i added only A-record, it doesn't work)
