auth method: Normal password

On mail,
List Accounts,
then edit any account
on the right tab
Select USE DOMAIN HOSTNAME, the tab won't change, still showing server hostname.

Another question is about IMAP and SMTP auth method.
IMAP auth method: Normal password
SMTP auth method: Normal password

does normal password mean the password is transferring without any encryption?
