DNS Digital Ocean
How do I just leave Vesta to manage DNS zones , pointing to the work I have to do the setup of the Digital Ocean within the panel , I would just leave Vesta Manage

If I understand you correctly, your problem is that you don't want to use DigitalOceans name servers to set up each record. To solve this you have to run two redundant name servers (which can be done using a DNS cluster, read more in docs) and then set your domains Glue records to point to your ns1.yourdomain.com and ns2.yourdomain.com (Make sure they're added in Vesta under your domain.com)
