What a version default it in a new instalations in Centos 7 or Ubuntu 16?

Nginx i think it in last versions but versions php maybe need update. Can tell me please?

I'm running Ubuntu 16.04 LTS and it gives me PHP 7.0

but do make sure your app(s) are compatible with PHP 7. Alot of old sites/apps won't work with php7 without tweaking the code.
