I'm more used to working with nginx as my primary web-server. How can I change the web-server from apache2 to nginx in my vestacp?

I don't think you can just change, you would need to reinstall the server.

the most direct way might be to uninstall vestacp, followed by re-installing the pack by checking only nginx without apache, ie., the nginx plus php-fpm style.
