Hello, it is possible to specify nginx options (gzip, proxy cache on/off) per website? It would be nice

Well, you can create custom template for each site. Templates are stored in the following folder /usr/local/vesta/data/templates/web/nginx/. Copy default.tpl and default.stpl under new name and change desired options.
We are trying to keep vesta simple as we can. This also means that some useful features won't be implemented. It's hard choice but that's the way we see it.
