1. Nginx web temaplate: what's the difference between wordpress and wordpress2?
2. Can we delete templates? Where?
3. Backend template php5-fpm: what's the difference between no-php and socket?

Yes, you can delete templates and create your own
/usr/local/vesta/data/templates/web/nginx/php5-fpm/

socket - php-fpm work using unix socket
